Emeritus Professor Mike Gidley was Foundation Director of the Centre for Nutrition and Food Sciences at the University of Queensland from 2003 to 2022. The Centre is part of the Queensland Alliance for Agriculture and Food Innovation, in partnership with the Queensland Department of Primary Industries.
Prof Gidley’s research is at the interface between nutrition and food sciences with a focus on structure - function - nutrition relationships in plant-based foods, feeds and ingredients. This has led to the detailed characterisation of starch and dietary fibre digestion and fermentation both in vitro and in vivo, with the understanding generated leading to opportunities for optimising the nutritional value of foods and feeds.
Prof Gidley is a Fellow of NSA, AIFST, the International Academy of Food Science & Technology and the Cereals & Grains Association. He also co-chaired the development of ‘Nourishing Australia – a decadal plan for the science of nutrition’ under the auspices of the Australian Academy of Science.
