Professor Hoffman is an Animal Scientist who specialises in Meat Science. He was born and raised on a cattle and pig ranch in Zimbabwe. He studied Animal Science at Stellenbosch University and later became an academic at his alma mater. After 20 years at Stellenbosch University as a Professor Extraordinary, he started his role as a Senior Researcher in The Centre for Nutrition and Food Science (CNAFS) within the Queensland Alliance for Agriculture and Food Innovation (QAAFI) at The University of Queensland. Here at CNAFS, he continued his research on the utilistion of insects, with a focus on Black Soldier Fly Larvae (BSFL). A research passion for these insects originated around 20 years ago when he started evaluating the impact of the partial replacement of protein feedstuffs in chicken diets on the meat quality of the chickens. Coming from Africa, where entomophagy is a common practice (he has eaten numerous insects), he has always been interested in the role of insects as human food. As a result, he has evaluated the use of insects in various meat products such as sausages and burgers.
