Dr Jaz Skinner is a lecturer in Animal Science at the University of Southern Queensland (UniSQ), with expertise in equine and animal nutrition. She completed her PhD at the University of Queensland, where her research focused on the role of vitamin K and vitamin K-dependent proteins (VKDPs) in horses. Her work utilised mass spectrometry and proteomic techniques to investigate VKDPs, particularly osteocalcin and its role in bone metabolism. While centred on equine nutrition, the implications of Dr Skinner’s work on osteocalcin extend beyond horses, offering valuable insights into bone health and vitamin K function across species. Dr Skinner has contributed to a range of research projects spanning nutrition, pharmacology, and exercise physiology in both companion and production animals. She has extensive teaching experience across equine, veterinary, and animal science disciplines and is passionate about mentoring the next generation of animal scientists.
